Some desserts just make you stop mid-bite, fork in hand, and think: wait, what is actually in this?
This no-bake coffee cheesecake is a real showstopper: dark and glossy, finished with toasted coconut and shaved chocolate, the kind of dessert you would expect to be served at a nice restaurant. It tastes as good as it looks. Cool, creamy, and deeply chocolatey, with only a quiet hint of coffee in the background. That coffee will not make it taste like a latte. It simply makes the chocolate taste more like itself.
The best part is that it feels a little lighter than it looks. You still get a proper, indulgent cheesecake. A few simple swaps behind the scenes just mean you are not weighed down afterwards.
What Makes It Rich, and What Keeps It Light
Every good dessert has a few key ingredients doing all the heavy lifting for flavor, and others that are just there for texture.
- The Double Chocolate: This is the part we don’t touch. Using a mix of milk and white chocolate gives you that deep sweetness and smooth texture that you just cannot fake.
- The Coffee Hint: A heaped teaspoon of instant coffee powder is there to do quiet work in the background. It deepens the chocolate flavor the same way a tiny pinch of salt makes caramel taste better.
- The Smart Swaps: The filling uses light cream cheese (a high-protein version works too) alongside creamy mascarpone, and the topping gets its tang from Greek yogurt. You still get that lovely creamy body, just a little lighter.
Why You Will Love Making This
- No oven needed: A total lifesaver on warm days or when the oven is already busy.
- Make-ahead friendly: It actually needs at least 3 hours in the fridge to set properly, which makes hosting so much easier.
- Looks impressive, easy to do: It feels fancy on the table, but the process itself is very forgiving.
Ingredients
(Tip: Try to use room-temperature dairy, so your filling mixes up completely smooth without lumps!)
For the Crust:
- graham crackers or digestive biscuits, crushed
- cup almonds, crushed
- butter, melted
- ground ginger
For the Double Chocolate Coffee Filling:
- milk chocolate
- white chocolate
- light cream cheese (a light or high-protein version works)
- mascarpone
- instant coffee powder
For the Topping:
- cream cheese (full-fat is fine)
- Greek yogurt
- Powdered sugar, to taste
To Decorate:
- Desiccated coconut, lightly toasted
- Roasted whole almonds or pecans
- Dark chocolate, shaved
- Tonka bean, shaved and whole (optional, for decoration only)
Step-by-Step
- Make the crust: Melt the butter. Crush the biscuits and almonds in a food processor, then mix them with the melted butter and the ground ginger. Line the base of an 11-inch (28 cm) springform pan with parchment paper and attach the sides. Press the crumbs firmly into the base and chill briefly while you make the filling.
- Melt the chocolate: Melt the milk chocolate and white chocolate together over a double boiler, or in short microwave bursts at no more than 400 W. Stir in the instant coffee until dissolved, then let it cool slightly.
- Make the filling: Beat the light cream cheese and mascarpone with the chocolate mixture until smooth.

- Let it set: Pour the filling over the crust and refrigerate for at least 3 hours, until fully set.
- Add the topping: Whisk the cream cheese, Greek yogurt and powdered sugar until smooth. Mix gently, since overmixing can break the yogurt’s texture. Spread the topping evenly over the chilled cheesecake.
- Decorate: Finish with the toasted coconut, roasted almonds or pecans, shaved dark chocolate and, if you like, shaved tonka bean. Keep refrigerated until serving.
Tips for the Best Cheesecake
Clean slices: If you want those neat, clean edges on your slices, run your knife under hot water and wipe it dry with a towel between cuts.
Don’t skip the coffee: Even if you are not a coffee fan, I promise you won’t taste coffee flavor. It is just there to make the chocolate taste bolder.
Tonka bean is decoration only: Shaved tonka bean adds an almond-vanilla warmth, but the whole beans are just for looks and are not meant to be eaten. Leave them out if you like. Pecans work in place of the almonds on top.
