White Chocolate – Pistachio – Cappuccino Cupcakes 🧁 If you wish for a healthier version of the exact same thing, check out my previous post before this one! But here I share the initial, more indulgent recipe - both versions are absolutely# bulletproof. 🤎 The ingredients are below, and the instructions are in the first comment! 💬 For the muffins 🥧 12 muffin paper liners
3 eggs
115 g room temperature butter or extra virgin coconut oil
100 g sugar
125 g milk
190 g sifted plain flour
1½ tsp baking powder
1 tsp vanilla sugar or vanilla extract
1 pinch of salt
80 g white chocolate For the frosting 🍥 Piping bag with your preferred piping tip
(or simply spoon the frosting on — works just as well)
200 g milk chocolate
100 g white chocolate
250 g cream cheese
150 g mascarpone
1 sachet instant cappuccino powder (about 15 g)
1 tbsp natural pistachio paste (stir well before using, as it can separate)
Almonds, pistachios, pecans, or other nuts for decorating

🍓Brita Cake is a traditional Finnish layered meringue cake with a soft vanilla base, crispy almond topping, and fresh whipped cream with berries. It was one of the most requested desserts from my former home bakery — and once you try it, you’ll understand why. This cake has a loooot of sugar in it, but still it just seems so light when having a bite! You can choose any berries you like, and you can make the cake 2 times smaller by dividing the amounts by half. You may substitute 1/3 of the wheat flour amount with spelt flour if you want slightly healthier sweet comfort! I did that in this recipe this last time I was making the video, and it worked beautifully - the flavor or texture did not suffer because of that. Take the cream cheese to room temperature 1-2 hours ahead, otherwise it can remain lumpy, no matter how much you whip (and you shouldn’t whip too much, because the heavy cream can get separated). Please always use free-range eggs if possible. They’re not much more expensive these days; they’re beautiful, tasty, healthy, and cruelty-free. BRITA CAKE Double Batch (Serves 12–16). Oven Temperature 350°F / 175°C. Pan Size
approx. 13×18 inch OR 33×46 cm sheet pan. For the Cake Base: 6 large egg yolks
2 large whole eggs
1 cup (200 g) granulated sugar
1⅓ cups (300 g) unsalted butter, melted
2½ cups (300 g) all-purpose flour (you can substitute 1/3 of the flour amount with healthier spelt flour)
3 teaspoons baking powder For the Meringue: 6 large egg whites
1⅓ cups (265–270 g) granulated sugar
2 teaspoons vanilla sugar
1 cup (100 g) sliced almonds For the Filling:
1 cup (240 ml) heavy whipping cream
6 tablespoons (75 g) granulated sugar
1 cup (240 ml) cream cheese (room temp)
